Chicken Katsu Sando with Boneless Breast
Panko-crusted chicken breast cutlets in soft bread with shredded cabbage, creamy mayo and a tangy tonkatsu-style sauce.
Raw materials
Slice the breast into thin cutlets so the crust turns golden at the same time the chicken finishes.

Ingredients
Method
Press the crumbs on firmly and let the cutlets rest 5 minutes before frying.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Make cutlets
Slice each breast in half horizontally. Pound gently to 1 cm. Season with salt and pepper.
- 03Crumb
Dip each cutlet in flour, then egg, then press into the panko. Rest for 5 minutes.
- 04Fry
Heat the oil in a pan on medium-high. Fry the cutlets for 3 to 4 minutes per side until golden. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer. Drain on a rack.
- 05Make the sauce
Stir the ketchup, Worcestershire sauce, soy sauce and sugar together.
- 06Build
Butter the bread lightly. Spread mayo on one slice, add cabbage, a cutlet brushed with sauce and the second slice.
- 07Cut and serve
Press gently, trim the crusts if you like, and cut in half.
