Chicken Lollipop with Schezwan Dip
Crisp-coated chicken lollipops with a fiery schezwan dip. A party starter that disappears fast.
Raw materials
One pack of ten lollipops makes a starter for four.

Ingredients
Method
Fry in two or three batches and keep the oil steady.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Marinate
Mix the marinade, coat the lollipops and rest for 1 hour in the fridge.
- 03Make the batter
Whisk the corn flour, flour, egg and enough water to a thick coating. Dip the lollipops in it.
- 04Fry
Heat the oil to medium-high. Fry in batches for 8 to 10 minutes, turning, until deep golden. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 05Drain
Drain on paper and keep warm.
- 06Make the dip and serve
Mix the schezwan sauce, mayonnaise and honey. Serve the lollipops hot with the dip.
