Chicken Mince Shakshuka-Style Meatball Skillet
Soft chicken meatballs simmered in a spiced tomato-pepper sauce with eggs poached right in the pan. Scoop it up with warm bread.
Raw materials
Chicken mince makes light, tender meatballs. Do not overmix.

Ingredients
Method
Let the sauce reduce before the eggs go in, so they poach instead of floating.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Shape the meatballs
Mix the mince with the breadcrumbs, egg, garlic, cumin, paprika, parsley and salt. Roll into 12 small balls.
- 03Start the sauce
Heat the oil in a wide skillet. Cook the onion and capsicum for 6 minutes. Add the garlic and spices for 1 minute.
- 04Simmer
Add the tomatoes and 100 ml water. Simmer for 8 minutes until thick.
- 05Cook the meatballs
Nestle the meatballs in the sauce. Cover and simmer for 12 minutes, turning once. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 06Poach the eggs
Make small wells between the meatballs and crack in the eggs. Cover and cook for 5 to 6 minutes until the whites set.
- 07Finish
Scatter the feta and parsley. Serve straight from the pan with warm bread.
