Ingredients
Method
Make the chimichurri first. It tastes better after 15 minutes.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken. Heat the oven to 220 °C.
- 02Boil the potatoes
Boil the potatoes in salted water for 15 minutes until a knife slides in. Drain and let them steam dry.
- 03Smash and roast
Lay them on a tray, press each flat with a glass, drizzle with oil, salt and rosemary. Roast for 25 minutes until crisp.
- 04Make the chimichurri
Stir all the chimichurri ingredients together and rest while you cook the steaks.
- 05Sear the steaks
Season the steaks. Heat the oil in a heavy pan and cook for 4 to 5 minutes per side without moving. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 06Serve
Rest the steaks for 3 minutes. Serve with the potatoes and plenty of chimichurri.
