Ingredients
Method
Take the pan off the heat before adding brandy, then return it to the flame.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Sear
Season the steaks. Heat the oil and half the butter in a heavy pan and cook for 4 to 5 minutes per side. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer. Rest on a plate.
- 03Mushrooms
In the same pan, cook the mushrooms and shallot in the remaining butter for 6 minutes. Add the garlic for 30 seconds.
- 04Deglaze
Off the heat, add the brandy. Return to the heat and let it bubble for 1 minute. Add the Worcestershire sauce, mustard and stock and simmer for 3 minutes.
- 05Add the cream
Stir in the cream and simmer for 2 minutes until it coats a spoon.
- 06Serve
Return the steaks to the pan briefly to warm. Spoon the sauce over and finish with parsley.
