Ingredients
Method
7 steps. Read it through before you start.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Roast the spices
Dry roast the coconut, chillies, coriander, poppy seeds, cumin, pepper, cloves, cinnamon and star anise on low for 6 to 8 minutes until the coconut turns brown. Cool.
- 03Grind
Grind to a smooth paste with 100 ml water.
- 04Cook the onions
Heat the oil. Fry the onions until golden. Add the ginger-garlic paste and turmeric for 1 minute.
- 05Add the paste
Add the masala paste and cook for 8 minutes, stirring, until the oil separates.
- 06Cook the chicken
Add the chicken, salt and the rest of the water. Cover and simmer for 20 minutes. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 07Finish
Stir in the tamarind. Simmer 3 minutes and serve with pav or rice.
Questions
Can I use fresh coconut?+
Yes, but roast it a little longer so the water cooks off.
Is xacuti very hot?+
