Ingredients
Method
Blend the sauce smooth for a restaurant finish.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Blend the sauce
Blend the tomatoes, chipotle, garlic, oregano, cumin and water until smooth.
- 03Soften the onion
Heat the oil in a pan and cook the sliced onion for 6 minutes until soft.
- 04Simmer the chicken
Add the sauce and whole thigh pieces. Cover and simmer for 25 minutes, turning once. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 05Shred
Lift the chicken out, shred with two forks and return it to the sauce. Simmer uncovered for 5 minutes. Season to taste.
- 06Warm the tortillas
Warm the tortillas on a dry hot pan for 20 seconds per side.
- 07Serve
Fill with chicken, chopped onion, coriander, curd and a squeeze of lime.
Questions
Where can I find chipotle?+
Look for canned chipotle in adobo in large supermarkets or online. The paprika and chilli swap works well too.
Can I make it ahead?+
Yes. The tinga keeps for 3 days in the fridge and reheats well.
