Ingredients
Method
Cook the chicken fully, chill it for 10 minutes, then dress it. Never use raw chicken here.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken. Cut the breast into 2 cm cubes.
- 02Cook the chicken
Season the cubes. Heat the oil in a pan on medium-high and cook for 6 to 8 minutes, turning, until golden. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 03Chill
Spread the chicken on a plate and cool for 10 minutes in the fridge.
- 04Whisk the dressing
Whisk the coconut milk, lime juice, soy sauce, sesame oil, honey, ginger and chilli flakes.
- 05Toss
Toss the chicken cubes in two thirds of the dressing.
- 06Build the bowls
Divide the rice into bowls. Top with chicken, cucumber, edamame, avocado and radish. Drizzle over the rest of the dressing and finish with sesame seeds.
