Greek Souvlaki Chicken Breast Skewers with Tzatziki
Lemon-oregano chicken breast skewers grilled until charred at the edges, tucked into warm pita with tzatziki and tomato.
Raw materials
Breast cubes on skewers cook fast. Keep them even and do not overcook.

Ingredients
Method
Marinate at least 1 hour. The curd and lemon tenderise the breast.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken. Cut the breast into 3 cm cubes. If using wooden skewers, soak them in water for 20 minutes.
- 02Marinate
Mix the marinade, coat the chicken and refrigerate for 1 to 4 hours.
- 03Make the tzatziki
Mix the curd, cucumber, garlic, herbs, lemon, oil and salt. Chill.
- 04Skewer
Thread the chicken onto skewers, leaving a small gap between pieces.
- 05Grill
Cook on a hot grill or griddle pan for 10 to 12 minutes, turning, until charred and cooked through. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 06Serve
Warm the pita. Fill with chicken, tzatziki, tomato and red onion.
