Green Goddess Chicken Breast Meal-Prep Salad Jars
Lemon-pepper chicken breast layered with chickpeas, crunchy veg and greens over a herby green goddess dressing. Three lunches in 40 minutes.
Raw materials
One pack of breast makes three jars of about 150 g chicken.

Ingredients
Method
Dressing goes in the bottom of the jar and leaves on top, so nothing goes soggy.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken. Cut the breast in half horizontally for even thickness.
- 02Season and cook
Rub the chicken with the seasoning and oil. Cook in a hot pan for 5 to 6 minutes per side. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer. Rest for 5 minutes and dice.
- 03Blend the dressing
Blend the curd, mayo, herbs, spring onions, garlic, lemon, oil and salt until smooth and green.
- 04Layer the jars
Spoon dressing into the base of each jar. Add chickpeas, cucumber, tomatoes, quinoa and chicken.
- 05Top and close
Pack the leaves on top. Seal and refrigerate once cool.
- 06Eat
Shake or tip into a bowl and toss just before eating.
Questions
How long do the jars keep?+
Up to 3 days in the fridge, sealed. Keep the leaves on top, away from the dressing.
Can I use thigh?+
Yes. Boneless thigh stays juicier. Cook for the same time.
