- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken.
- 02Roast the paste
Dry roast the coconut, chillies, coriander, sesame, cumin, pepper, cloves and cinnamon for 5 minutes. Roast the onion until charred. Grind with a splash of water.
- 03Cook the base
Heat the oil. Fry the chopped onion, then the ginger-garlic paste and turmeric.
- 04Add the paste
Add the ground masala. Cook for 8 minutes until the oil floats on top.
- 05Add the chicken
Add the chicken and salt. Stir for 5 minutes, then pour in the water.
- 06Simmer
Cover and cook for 15 to 20 minutes until the rassa is thin and red. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
