Lemongrass Chicken Thigh Banh Mi
Charred lemongrass-marinated boneless thigh in a crusty roll with quick-pickled carrot and cucumber, coriander and chilli mayo.
Raw materials
Thigh browns well and stays juicy in a hot sandwich.

Ingredients
Method
Mince the lemongrass very fine. Use only the tender lower stalk.
- 01Get set
Take the chicken out of the fridge 15 minutes before cooking. Pat it dry with paper towels. Wash your hands, board and knife after handling raw chicken. Slice the thigh into thin strips.
- 02Marinate
Mix the marinade, coat the chicken and rest for 30 minutes.
- 03Quick-pickle
Stir the vinegar, sugar, salt and water until dissolved. Add the carrot and cucumber and leave for 20 minutes.
- 04Cook the chicken
Heat a pan on high. Cook the chicken in a single layer for 6 to 8 minutes, turning, until charred and cooked through. Cook until no pink remains and the juices run clear, or 74 °C at the thickest part if you use a thermometer.
- 05Mix the mayo
Stir the mayonnaise with the chilli sauce.
- 06Toast and build
Warm the rolls. Spread with chilli mayo, add chicken, pickles, cucumber, coriander and chilli.
