Method

Eight steps and one cooker. Take your time with the onions and the rest looks after itself.

  1. 01
    Get set

Take the mutton out of the fridge 15 minutes before cooking. Do not wash it: Meatigo mutton is cleaned and ready to cook from pack to pan. Chop everything before you light the stove.

  2. 02
    Heat the oil

Heat the oil in the cooker over medium heat. Add the cumin, bay leaf and cardamom and wait 30 seconds until they smell fragrant.

  3. 03
    Brown the onions

Add the onions with a pinch of salt and cook for 10 minutes, stirring, until golden brown. This step is where most of the flavour is built, so do not rush it.

  4. 04
    Add ginger-garlic and chillies

Stir in the paste and chillies and cook for 1 minute, until the raw smell goes.

  5. 05
    Add tomatoes and spices

Add the tomatoes and powders. Cook for 5 to 6 minutes, mashing the tomatoes, until the oil starts to separate at the edges.

  6. 06
    Add the mutton

Add the mutton and stir over high heat for 5 minutes to brown the outside and coat it in masala.

  7. 07
    Pressure cook

Add the hot water, close the lid and cook on medium heat for 6 to 7 whistles, or about 30 minutes. Let the pressure drop naturally.

  8. 08
    Check and finish

Open the lid. If the mutton is not tender, cook for 5 more minutes without the lid. Stir in the garam masala and coriander and rest for 10 minutes before serving.

Questions

How do I know the mutton is done?+

A piece should come off the bone easily and a fork should slide through the meat with little resistance. If not, cook for 5 to 10 minutes more.

Can I make it ahead?+

Yes. The curry tastes better the next day. Keep it in the fridge for up to 3 days and reheat until steaming hot.

What goes with it?+

Plain rice, jeera rice or roti, with sliced onion and lemon on the side.
