Garlic-Butter Mutton Chops for a Date Night at Home
Pan-seared mutton chops basted in garlic butter and thyme. A restaurant-style main for two in 30 minutes.
Raw materials
Burra chops are thick enough to sear hard and stay juicy inside.

Ingredients
Method
Pat dry, sear hard, baste and rest.
- 01Get set
Take the chops out of the fridge 30 minutes before cooking. Pat them completely dry with paper towels.
- 02Season
Season both sides with salt and pepper.
- 03Sear
Heat a heavy pan with the oil on high until it just smokes. Sear the chops for 4 minutes per side without moving them, until deeply browned.
- 04Baste
Lower the heat. Add the butter, garlic and thyme. Tilt the pan and spoon the butter over the chops for 3 to 4 minutes.
- 05Check
Cut into the thickest chop. The meat should be cooked through with no raw centre. Cook a few minutes more if needed.
- 06Rest and serve
Rest for 5 minutes. Spoon over the pan butter and serve with lemon and sides.
