Method

Sauté first, then pressure. Use only a little water: the pot traps steam and the mutton releases its own juices.

  1. 01
    Get set

Take the mutton out of the fridge 15 minutes before cooking. Do not wash it: Meatigo mutton is cleaned and ready to cook from pack to pan.

  2. 02
    Sauté the base

Set the Instant Pot to Sauté on high. Heat the ghee, add cumin, bay leaf and cloves, then the onions. Cook for 6 to 8 minutes until golden, stirring so nothing catches.

  3. 03
    Add aromatics and spices

Stir in the ginger-garlic paste and chillies for a minute, then the tomatoes and powders. Cook for 3 to 4 minutes until the tomatoes break down.

  4. 04
    Add the mutton

Add the mutton and stir for 2 to 3 minutes to coat it in the masala. Pour in the hot water and scrape the bottom so nothing sticks. Sticking triggers the burn warning.

  5. 05
    Pressure cook

Lock the lid, seal the vent and cook on high pressure for 15 minutes. Allow 5 minutes of natural release, then release the rest manually.

  6. 06
    Reduce and finish

Switch to Sauté, stir in the garam masala and simmer uncovered for 3 to 5 minutes until the gravy is as thick as you like. Finish with coriander.

Questions

Can I use bone-in mutton?+

Yes. Allow about 25 to 30 minutes on high pressure, which puts the recipe past 45 minutes in total. Boneless is the faster choice for weeknights.

Why did my Instant Pot show a burn warning?+

Usually masala stuck to the base. Deglaze with the hot water and scrape the bottom before sealing, and keep the layers of spice below the meat rather than on the base.

Do I need to marinate?+

No. Searing the masala with the meat and pressure cooking give plenty of flavour for a weeknight.
