Mutton Kofta Curry in Rich Tomato Gravy
Soft mutton mince koftas simmered in a smooth onion-tomato gravy. A weekend curry that looks like effort and is not.
Raw materials
One pack of mince makes about twelve koftas.

Ingredients
Method
Shape the koftas, brown them lightly, then simmer in the gravy.
- 01Get set
Take the mutton out of the fridge 15 minutes before cooking. Do not wash it: Meatigo mutton is cleaned and ready to cook from pack to pan.
- 02Make the kofta mix
Mix the mince with the paste, chillies, garam masala, besan, coriander and salt. Knead for 2 minutes until sticky. Rest for 10 minutes.
- 03Shape
Wet your hands and roll the mix into walnut-sized balls.
- 04Make the gravy
Cook the onions in the oil for 8 minutes until golden. Add the tomatoes and powders and cook for 8 minutes. Cool slightly, blend smooth and return to the pan with the hot water.
- 05Simmer the koftas
Bring the gravy to a gentle simmer. Lower the koftas in one by one. Cover and cook on low for 20 minutes. Do not stir for the first 10 minutes, or they may break.
- 06Finish
Check that a kofta is cooked through, rest for 5 minutes and serve with rice or roti.
Questions
Why did my koftas break?+
The mix was too wet, or they were stirred early. Add a little more besan and let the koftas set for 10 minutes before moving them.
Can I fry the koftas first?+
Yes. Brown them in oil for 3 to 4 minutes before adding them to the gravy. They hold their shape better.
