Marinade 1: Curd and chilli
Marinade 2: Fresh green
Marinade 3: Mustard and garlic
For all three

Method

The marinade does the work. Use one of the three per pack, then cook the mutton any way you like.

  1. 01
    Get set

Take the mutton out of the fridge 15 minutes before cooking. Do not wash it: Meatigo mutton is cleaned and ready to cook from pack to pan.

  2. 02
    Prepare the mutton

Pat the pieces dry. If using boneless mutton, cut it into 3 cm cubes or strips so the marinade reaches every side.

  3. 03
    Marinade 1: Curd and chilli

Mix the curd, ginger-garlic paste, chilli powder and salt. Coat the mutton and marinate for 2 to 8 hours in the fridge. The curd softens the meat gently. This one suits curries, tikkas and roasts.

  4. 04
    Marinade 2: Fresh green

Mix the chutney, lemon juice, pepper and salt. Coat the mutton and marinate for 30 to 60 minutes only. Lemon juice can make meat tough and chalky if left too long. This one suits grills and skewers.

  5. 05
    Marinade 3: Mustard and garlic

Warm the mustard oil until it just smokes, cool it fully, then mix with the garlic, pepper and salt. Coat the mutton and marinate for 1 to 4 hours. This one suits a hot pan fry and roasting.

  6. 06
    Bring to room temperature

Take the mutton out of the fridge 20 minutes before cooking. Cold meat cooks unevenly.

  7. 07
    Cook it

Grill, air fry or pan sear in a hot pan for 3 to 4 minutes per side, or add to a curry and cook until tender. Boneless pieces need only a short cook; bone-in pieces need longer, slower cooking.

Questions

How long should I marinate mutton?+

Curd marinades work in 2 to 8 hours. Acidic marinades with lemon or vinegar need less, 30 to 60 minutes. Mustard-garlic works well from 1 to 4 hours.

Can I freeze mutton in the marinade?+

Yes. Freeze it in a bag for up to a month and thaw overnight in the fridge. Do not refreeze.

Why is salt not counted as one of the three?+

Salt is a seasoning rather than a flavour base. The three ingredients listed are what create each marinade’s character.
