Method

Marinate well, cook hot, and rest before serving.

  1. 01
    Get set

Take the mutton out of the fridge 15 minutes before cooking. Do not wash it: Meatigo mutton is cleaned and ready to cook from pack to pan. Cut the mutton into 3 cm cubes.

  2. 02
    Marinate

Mix all the marinade ingredients, coat the mutton and refrigerate for at least 2 hours, or overnight.

  3. 03
    Heat the oven

Heat the oven to 220 °C with a rack in the upper third. Thread the cubes on skewers or lay them on a lined tray with a gap between each.

  4. 04
    Roast

Roast for 15 to 18 minutes, turning once, until the edges brown.

  5. 05
    Char

Switch to the grill for 2 to 3 minutes for a smoky edge. Brush with a little oil or butter.

  6. 06
    Rest and serve

Rest for 3 minutes and serve with onion rings, chutney and lemon.
