Raw materials

Ingredients
Method
Roast plain first and glaze at the end so the mint stays bright.
- 01Get set
Take the rack out of the fridge 30 minutes before cooking and heat the oven to 200 °C. Pat it dry.

- 03Roast
Roast for 10 minutes.
- 04Glaze
Mix the glaze ingredients. Brush the rack and roast for 3 to 5 minutes more, until a thermometer reads 57 to 60 °C for medium-rare to medium.
- 05Rest
Rest for 10 minutes.
- 06Carve and serve
Cut between the bones and serve with the remaining glaze.
Questions
Why glaze late?+
Sugar and herbs burn in long roasting. Brush them on near the end.
Can I use store-bought chutney?+
Yes, if it is a thick mint-coriander chutney. Thin ones will run off.
