Like any recipe, the quality of the Meat used is a critical factor in creating a truly exceptional Kebab. Great meat not only provides the foundation for the Kebab’s flavor but also affects its texture, juiciness, and overall enjoyment. High-quality Meat like ours is pasture-raised, grass-fed and free range, giving the Meat a richer and more complex flavor profile compared to Meat from animals confined to cages and pumped with antibiotics and growth hormones. It’s also leaner and therefore healthier.

Have you ever bitten into a Kebab and truly savoured how moist it is? It’s borderline juicy, with a swirl of flavours that add oomph to every bite. This juiciness is also attributed to using high-quality Meat and is the marking of a sensational Kebab. Premium Meat allows for the Kebab to retain its moisture and tenderness during the cooking process, resulting in a juicy and succulent kebab. 

 

Grind size 

When you bite into an average Kebab, the texture might feel pasty or dry. This has everything to do with finding the perfect grind size. Grind size refers to the coarseness or fineness of emat that is used in the Kebab mixture. A courser grind size results in a more textured, chunky consistency (think Seekh Kebabs), while a finer grind size can result in a more tender, juicy mouthfeel (think Shammi Kebabs). A super fine grind size can also absorb the marinade and spices more evenly, resulting in a flavourful Kebab (think Galouti Kebabs).

For instance, our Amritsari Seekh Kebabs feature a recipe from an old, Amritsari cookbook.
