The chicken rice bowl is the unofficial meal of the gym. It’s simple, filling, easy to scale up for bulking or down for cutting, and it tastes good every time if you change the sauce. Instead of one fixed recipe, here’s a formula you can mix and match all week, plus five combinations to get you started.

Quick answer

A chicken rice bowl combines cooked rice, about 150 g of seasoned chicken, a mix of vegetables and a sauce. For a basic version, sear marinated chicken for 5 to 6 minutes per side, slice it, and serve over 1 cup of rice with cucumber, onion, carrots and a curd or soy-based dressing. It takes about 15 minutes and gives 40 g of protein or more.

The formula

Layer Choose one or two Portion
Base White rice, brown rice, jeera rice, quinoa, cauliflower rice ½ cup (cutting) to 1.5 cups (bulking), cooked
Protein Chicken breast, chicken steak, salmon, eggs, paneer 120–160 g cooked
Vegetables Cucumber, carrot, cabbage, capsicum, corn, spinach, edamame 1–2 cups
Sauce Mint-curd, soy-garlic, peri-peri, peanut, tandoori mayo (curd-based) 2–3 tbsp
Crunch Sesame, peanuts, fried onions (small amount), spring onion 1 tbsp

The basic recipe (serves 1)

Ingredients: 1 pack pre-marinated chicken (or 150 g chicken breast with your own marinade), 1 cup cooked rice, ½ cucumber, 1 small carrot, ¼ onion, 2 tbsp hung curd, 1 tsp mint chutney, lemon, salt, 1 tsp oil.

  1. Cook the chicken. Heat 1 tsp oil in a pan on medium-high heat. Sear the chicken 5 to 6 minutes per side until it reaches 74°C inside. Rest for 3 minutes and slice.
  2. Prep the vegetables. Slice cucumber, grate carrot and finely chop onion. Toss with lemon and a pinch of salt.
  3. Make the sauce. Mix hung curd, mint chutney and a pinch of salt.
  4. Rice at the bottom, vegetables on one side, chicken on the other, sauce on top.

Meal-prep tips

  • Cook rice and chicken separately and store in different boxes.
  • Keep sauces in small containers so vegetables stay crisp.
  • Refrigerate cooked rice quickly and use it within a day or two.
  • Reheat rice and chicken until steaming; add cold vegetables and sauce after.

FAQs

Is a chicken rice bowl good for weight loss? Yes. Keep rice to about half a cup and load up on vegetables.

Brown rice or white rice? Both work. Brown rice has more fibre; white rice digests faster after training.

How much chicken should go in a bowl? About 120 to 160 g cooked, for 35 to 50 g of protein.

The 10-minute version

Use Meatigo’s Everyday Chicken Breast or Everyday Chicken Steak, already marinated, for 32 g of protein per bowl. For the poke-style bowl, sear Pre-Sliced Salmon for 30 seconds a side.
